Every Waag was set up to perform the same function: to weigh, measure and quality control
the local butter and cheese by the standards of the day; not forgetting to tax as well. The example here was built in 1595 of red brick and stone with bow top windows all round the
first floor and a canopy to stop the sunlight spoiling the goods. That it has survived so long
is a reflection of the quality of the building and its importance to the city until 1880 when it fell out of use. It is now a well used restaurant.
